Salmon Dinner

Of course I had a goal this year to post in here a lot more and let's be honest, life has happened and I haven't gotten to share as much as I would like. Last night we had an amazing dinner, and I wanted to share it with all of you.
I never used to be a huge fish person, but since trying to change how I eat, I've opened up my palette to fish. Salmon specifically. I had it on our menu for last week but it went bad before the date on the package so we pushed it back to this week.  We tired a new "brand" if you want to call it.  Jake was told it tasted better than your normal Atlantic Salmon you get. It was Scottish Salmon, and I will have to say it was so much better!! We put a spicy honey glaze over top and it was amazing. So below I'm going to share the recipe we used! We sided it with some potatoes and asparagus, and it was seriously the best salmon I've ever had! Hope if you try this you also enjoy it as much!

.5 lb salmon per person is what we did but the recipe called for more.

Ingredients:
4 8 oz salmon fillets center cut
2 tsp. olive oil
1 tsp smoked or normal paprika
1 tsp garlic powder
3/4 tsp fresh ground black pepper more or less to taste
1/2 tsp cayenne pepper more or less to taste

The Sauce:
1/4 cup honey
4 cloves garlic minced or chopped
1 tbsp lemon juice
1/2 tsp onion powder
2 tbsps water
1/3 cup soy sauce 
1/2 tsp chili flakes
1 tbsp olive oil
1 1/2 tsp corn starch
1/2 tsp ginger powder (option)

Garnishes - optional
Green Onions
Toasted Sesame seeds
Lemon Wedges


Instructions 
    • 1. Remove the skin from the salmon. Slice them into 8 oz pieces and pat them dry.
    • 2. In a small bowl stir together paprika, garlic powder, fresh ground pepper, and cayenne pepper. Season both sides of the salmon with this seasoning. 
    • 3. In a small bowl or cup, mix together the sauce ingredients: honey, garlic, water, lemon juice, soy sauce, onion powder, cornstarch and ginger powder, chili flakes, and 1 tbsp. of olive oil to make the sauce. Set aside for cooking.
    • 4. Bring a large nonstick skillet over medium heat. Add 2 Tbsps. of olive oil. Place the salmon in the pan and sear for 5 minutes without moving. Flip and cook on the other side for 5 minutes.
    • 5. Pour the sauce into the pan and let the sauce and salmon cook together 2-3 minutes, or until the sauce thickens up. Scoop up some of the sauce and glaze the salmon as it cooks.
    • 6. Remove from heat and garnish with sesame seeds, chopped green onion, and lemon wedges before serving.




      This salmon was just falling apart on my fork as I would try and eat it. It had the amazing taste or sweet, savory, and spicy at the same time and none of it was over bearing. 
      The sides we just used olive oil and spices and baked in the oven until done.
