Starting something a little new with the blog. I still want to share the raw posts as much as possible but I also want to start posting regular with recipes, shopping trip tips, meal prep ideas and other life hacks and crafts I am working on.
With it being the end of canning season I'd love to share some of my favorites, and some of the meals I make with what we can.
The first recipe is my meatloaf. This is something I have worked on for a few years to perfect, my meatloaf.
Something I love with meatloaf is you can pretty much add just about anything and it never tastes bad. The three main ingredients for my meatloaf are, mozzarella cheese, cowboy candy brine, and cowboy candy. I will link my recipe here for the cowboy candy. I typically can all our jalapenos from our garden and the brine they are cooked in to use just for this, but it is something you can do without canning, and your own garden. Of course if you don't have a garden the best time to get one would be at a local farmers market, but if it happens to be on the off season you can buy what you need at your local grocery store.
I typically use venison, but the last few years we haven't gotten a deer so we use either ground turkey or hamburger. The other things you will need are typically things you actually might have on hand. Bread crumbs/crackers (saltine or Ritz), minced onion or onion soup mix - sometimes I use a red onion to change up the taste just a little bit, garlic, milk, egg, pepper, mozzarella cheese, ketchup (I like to use a sugar free one), salt, brown sugar, and Worcestershire sauce. I normally don't measure anymore because this is one of those recipes that I just know off top of my head. But here is the actual measurements:
2 lbs ground beef
1/3 c onion if you use a white/red onion or minced out of the jar (1 onion soup mix)
1 egg
1 c milk
1/2 tsp pepper
1 tsp salt
1/2 cup ketchup
1 cup crushed crackers or bread crumbs
1 tbsp Worcestershire sauce
Mix all the ingredients together in a large bowl.
Split meat mixture in half and lay first half down in loaf pan. Then take block or shredded cheese down in a layer to cover all the meat, then cover cheese with other half of meat mixture. Top meat with brown sugar ketchup mixture. ( I mix them in a small bowl and just make enough to cover the top of the meat) Top the brown sugar and ketchup with cowboy candy and extra brine. Bake for 1 1/2 hours at 350 degrees.
The second recipe is a more healthy recipe. Jake and I both love chips and cheese, tacos, nachos, anything with Mexican food really. So I thought I'd try my hand at pepper nachos. Again this is something I used a lot of what we had in the garden already but all these things can be purchased at your local grocery store.
I made enough to feed 3 adult and 2 kids, so make according to who you are feeding.
6 peppers ( I used 3 yellow and 3 red)
1 lb ground turkey
topped with mozzarella cheese
3 Roma tomatoes
half was topped with fresh jalapenos and a jar of cowboy candy
Taco Seasoning ( I used a homemade seasoning)
Preheat oven to 350.
Brown ground turkey and add taco seasoning.
While the turkey is browning, slice the peppers in strips and place on a cookie sheet.
Cover the peppers with ground turkey, and cover the turkey with cheese.
Add any desired toppings. I used what we had on hand. Onions, mushrooms, olives would also be great options to add.
Put cookie sheet in oven and bake for 20 minutes.
